Years ago, when I shared a warehouse with someone who owned a freeze-drying machine, I had no idea that moment would change the way I develop products forever. The second I saw the machine in action, my excitement went through the roof. I knew right away—this was going to be huge for me and for Domo Tea.

Fast forward to today, and my passion for freeze-dried ingredients has completely reshaped the way I approach recipe development. I’ve been slowly transitioning all my flavors away from natural flavours and replacing them with real, freeze-dried fruits, peppermint, and pumpkin. The results? Products that still deliver the vibrant flavors our customers love but with even more nutrients.

Why Freeze-Dried Ingredients?

Freeze-drying is a fascinating process that removes moisture from food while preserving its structure, taste, and—most importantly—nutrients. Unlike other drying methods that use heat (which can degrade vitamins and minerals), freeze-drying keeps nearly all of the original nutritional value intact.

The process works by first freezing the ingredient at extremely low temperatures. Then, through a process called sublimation, the ice is turned directly into vapor, bypassing the liquid stage altogether. This allows the food to maintain its color, flavor, and nutritional profile without the need for preservatives or added sugars. In other words, you get pure, concentrated goodness.

How This Shift is Changing Domo Tea

As I continue evolving Domo and Coco products, I’ve been replacing traditional flavoring methods with real, whole ingredients:

  • Strawberry Superfood Hot Chocolate – Instead of strawberry flavoring, we now use real freeze-dried strawberry powder, which delivers a rich, natural taste and adds a boost of vitamin C.

  • Strawberry Lemonade – The freeze-dried strawberry powder blends perfectly with our organic lemonade base, creating a vibrant, refreshing drink with real fruit benefits.

  • Peppermint Matcha & Pumpkin Chai – We’re now using pure freeze-dried peppermint and pumpkin to infuse these blends with real flavor rather than extracts or artificial additives.

This shift isn’t just about better taste—keeping our blends wholesome and packed with superfood benefits.
